Curried Chicken with Mango and Melon

Here’s a lovely healthy, tasty recipe to try if you’re watching those calories.


2 limes

6 oz plain low fat yoghurt

3/4 teaspoon curry powder

1/4 cup chopped crystalised ginger

1/4 teaspoon crushed red pepper

1 teaspoon salt

4 chicken breasts (skinned and boned)

1/2 cantaloupe melon chopped into thin strips

1 mango chopped into thin strips

1/2 cup chopped cilantro leaves



In a bowl, whisk 1 tablespoon of lime juice and 1/4 teaspoon of grated lime peel with the yoghurt, curry powder, half the ginger, half the crushed red pepper and a little salt.  Add the chicken to the marinade and leave to one side.

In a separate bowl, gently mix the melon, mango and cilantro leaves with the other half of the ginger plus 1 tablespoon of lime juice, a little of the lime peel and a pinch of salt.  Lastly, add in the remaining half of the crushed red pepper.

Now remove the chicken from the marinade (discard the left over marinade) and cook on a flat griddle pan until cooked thoroughly.  Remove and cut into thin slices.

To serve, place lettuce leaves onto 4 plates and top with the chicken and mango/melon mixture.


The great news is that each serving is only around 250 calories.
